  • Classic croquembouche made in France

The first time you see a “pièce montée” you might wonder, “How on earth do you serve it?” Then you wonder, “How do you eat it?” and eventually you wonder, “How do you make it?” and someone who has never seen a pièce montée before might say: “Who cooked that up?”
From the French words croque en bouche meaning ‘crunch in the mouth’. A croquembouche is a French cake, a kind of “pièce montée” often served at weddings, baptisms, and first communions. It is a high cone of profiteroles (choux filled with pastry cream) and traditionally dipped in chocolate bound with caramel, and usually decorated with threads of caramel, sugared almonds, chocolate, flowers, or ribbons. Very rich in the pallet, always a marvel to look at and somehow still a centerpiece at a French wedding. In 1760 a French pastry chef named Avice filled the buns with pastry cream and called them profiteroles … and that’s history!

    Paris | New York City | London | Cote d’Azur | Caribbean | Jamaica | Provence | Maroc | Monaco

A romantic wedding in France… the stuff that dreams are made of! If you are planning on getting married in France, there are several legal hoops to jump through. The key to success, as always, is good research and preparation then help from a professional wedding planner.
Always check with your embassy well in advance for up-to-date requirements. paris wedding photographer paris france photographe mariage parisThe following documents will be required:
    – Passports
    – Birth certificates
    – Proof of domicile (utility bills, etc.)
    – Evidence of termination of all previous marriages – original or certified copies of final divorce decrees, annulment decrees or death certificates
    – Certificates of marital status/celibacy (provided by the embassy in France)
    – Affidavit of law
    – Medical certificate
Affidavit of Law – Notarized statement, by an attorney licensed to practice in both France and the home country, certifying that the parties are free to contract marriage and that the marriage will be recognized in the country of residence.
Medical Certificates – Issued less than two months prior to the date of the marriage by a doctor in France or by a doctor approved by your local French Embassy or Consulate.
All civil documents must be originals endorsed with an Apostille Stamp with official translations verified by the French Consulate.
Residence Requirements and Publications of Bans.
At least one of the parties must have resided in the town in which the wedding is to take place for 30 days. Following these 30 days of residence, the couple must post the marriage banns at the city hall for 10 days before the wedding. Therefore, 40 days is the minimum period of residence before a civil ceremony can take place. This residency requirement cannot be waived.
Check with the local mairie for details. The documents may be presented 10 days or more before the publication of the bans.
Only civil weddings are legally recognized. A religious ceremony may only be performed after a civil ceremony. Marriages are performed at the city hall in the town in which at least one of the parties has met the residency requirement.
In a way, it is not such an easy task to comply to all of the paperwork needed to legally get married in France. • Checklist: A Good Organization and Planning

    Less Stress, More Fun
Weddings are notoriously stressful thanks to the many details and many personalities involved. Hiring a wedding planner to be present at your wedding celebration will allow them to field the stressful situations while you focus on looking your best and enjoying the unforgettable moments. Creating a buffer between you and the chaos will help you look more refreshed and radiant in your wedding pictures.

Picture Perfection – Timing the Day
Few couples realize how challenging it can be to keep a wedding on schedule. A skilled planner can time the day perfectly and communicate to everyone involved about what needs to happen at what time so that you have the time you need for the wedding pictures that are important to you. A photographer can only deliver you images they’ve been given time to create. When the schedule of the day is upset by any number of unexpected factors, a wedding planner can help get things on track and make sure your wedding experience is one you can remember with joy as you look through your beautiful wedding pictures.

    Save Money without Sacrificing Style
Designing an event to reflect your personal style and taste comes at a price, but it doesn’t necessarily need to be a high price if you have a great wedding planner. Planners are experts in wedding economics, and they can bring many ideas to the table that you might not have thought of on your own…Ideas that give you great style at great savings. Also, many planners can save you money when you’re booking your other wedding vendors because of their established relationships with various caterers, florists, and photographers. The look of a professionally designed wedding shows through in the wedding pictures and helps to authentically tell your love story with style and sophistication.

    Wisdom & Experience
Beautiful weddings don’t happen without a considerable amount of time and effort, and an experienced wedding planner knows all the nuances and details that must be attended to for an event to run smoothly. Hiring a wedding planner at least a few months in advance can help a couple identify small details that are easily overlooked, and there is no substitute for their wisdom and experience. A photographer is not at your wedding to be in your face, taking charge the events of your reception, or coaching you on how to cut the cake without making it fall over…your photographer will thank you if you have a planner there to do what a wedding planner does!

    Peace of Mind
The best wedding planners know that their job is to design and execute a wedding that fulfills your personal creative vision at the budget you have set, not to take over and do their own thing at your expense. Hiring a good wedding planner will benefit you from start to finish, from helping you make important decisions about your day, to keeping your wedding events on-schedule, to wrapping up the straggling details once you’ve joyfully waved goodbye to your guests. It will give you peace of mind to know that a professional is there to assist you every step of the way, and it will create the best possible environment for your photographer to create amazing and creative photographs of your wedding.

    DID YOU KNOW :

Confetti is Italian for sweets which in Italy are thrown over the couple as they emerge from the Church in that same way we use paper confetti. Before the use of paper confetti the married couple were showered with flowers, petals, rice or grains. This was to bestow prosperity and fertility on the couple. Raisins and nuts may also be used but rose petals are the best although they do not fly as high!
Trust us from experience, we’ve been hit a few times.

One of the many photographs that your wedding photographer has to get right; the family group portrait.
So first, scope out the location of your shot before hand,
think ahead about how you will pose people and frame your shot,
one of the group’s head hiding behind another person,
make sure everyone you want in the shot knows you want them a few minutes ahead of time,
make your your camera is on and has charged batteries…
Or simply trust us to organize everything for you so you can enjoy a chilled glass of champagne as we get the group together.
It can be so easy to keep the little ones happy with crayons, paper, reliable glue and a funky clown or a local magician popping here and there once in a while. Wedding Dances, Ballroom, Latin American, Sequence, Argentine Tango, Rock ‘n’ Roll, Street, Hip Hop, Line Dance, Tap, Belly Dancing, Flamenco, Power Yoga, Adult Ballet, Tea Dances and more…. Entertain your guests over cocktail hour with some fabulous ideas!Choosing your wedding DJ is the best part of your wedding preparations some brides would say. You get to meet a lot of wedding industry people who are generally nice, outgoing, and personable. Of course the big debate is DJ or Band. That’s sometimes one of the hard decisions a newlywed couple must make. The biggest advantage a wedding DJ has over a band is cost and you should get the best there is.It is our hope to provide the most beautiful and stunning food experience possible for our clients, with emphasis on quality, professional service, and the freshest available ingredients. We believe that the freshest ingredients need little manipulation in order to make them extraordinary. When food is seasonal and of exceptional quality, the raw product can speak for itself, as we present these hand-crafted foods simply and classically.

And for a wonderful saturday night fever, Dance Floor Lighting… A dance-club lighting set designed for your band and dance floor will have your guests dancing the night away. All photographs Olivier Lalin @WeddingLightThe Wedding Cake
Cutting the wedding cake is now part of the ritual celebrations at the reception. The couple make the first cut together to symbolise their shared future.
Cakes have been associated with weddings throughout history. The Romans shared a cake during the wedding ceremony itself. It was a plain confection made from wheat flour, salt and water. The Fijians and Some Native American tribes still incorporate cake in the wedding ceremonies.
It is said that unmarried guests who place a piece of wedding cake under their pillow before sleeping will increase their prospects of finding a partner and bridesmaids who do likewise will dream of their future husbands.
The top tier of the cake is often kept by couples for the christening of their first child.
Joking ! A simple photograph of the wedding cake in a classic wedding album will do just fine, therefore the importance of photography.

And in the morning off to distant countries for your honeymoon- We will have travel bags and tickets ready for you.
Did you know : “honeymoon” is thought to originate from the times when a man captured his bride. The couple would hide from the bride’s parents before marrying. The couple would remain in hiding for a further cycle of the moon after the wedding. During this period they drank honey wine.
In Scotland the custom was for a woman with milk in her breasts to prepare the marital bed to encourage fertility in the newlyweds.
In Ireland a laying hen was tied to the bed on the first honeymoon night in the hope that some of its fertility would be passed on to the couple. Eating a double yolked egg was also thought to bring fertility.
WOW …. in any case enjoy!
